Make Your Own LÄRABAR Balls: Healthy, Cheap, and Waste-Free*

*Okay, so my recipe isn’t 100% waste-free, but it’s definitely less waste than buying individually-wrapped bars at the store.

If your family is anything like mine, you go through a lot of snack bars. Frankly, I got tired of buying them and wanted to see if there was a way I could make them myself. (Which, if you remember, was one of my tips for avoiding waste a couple weeks ago.) LÄRABARs are one of our favorite snack bars because they use natural, minimal ingredients. And, bonus! That makes them really easy to DIY.

For this recipe, I chose to make LÄRABAR balls and keep them in a container instead of wrapping bars in plastic wrap. To take them to-go, I either put them in a silicone muffin cup or a small plastic container.

Two of my favorite things about this recipe: each ball has just about 4g of protein (if you make them like I did here), and it’s super easy to adapt depending on what you have on hand or what you’re craving. The first time I made them, I did more of a “Cashew Cookie” with dates, cashews, and cinnamon. This time I added chocolate chips, almonds, and vanilla. But you could add a lot of other things, like shredded coconut, nut butters, dried fruits, cocoa powder, sunflower seeds, or nutmeg. Don’t be afraid to get creative with it!

Instructions
  1. Place pitted dates, cashews, crushed almonds, chocolate chips, cinnamon, vanilla, and water in a food processor.

  2. Pulse the food processor (my button just says "Food Processor") until ingredients are well-blended, using a spatula to push ingredients down on the sides as needed.
  3. Put the banana flour in a small bowl to coat the balls.

  4. Take the blade out of the food processor bowl. Scoop out the mixture and roll in your hands to form 1-inch balls. Roll in the banana flour to coat, then lightly tap to remove extra flour. Place coated balls in a sealable container.

  5. Refrigerate or freeze for 4-6 hours to help them keep a solid form. Enjoy!
